SunButter Drops

These are great if you need a quick little cookie.  They have three ingredients, go together easily, and are tasty!  So I thought they'd be a good little treat for Valentine's Day.  I know, I know... there's no chocolate.  You could melt some chocolate chips in a bain-marie and dip these.   Mmm, I may have to make another batch! 

Sunbutter drops




Sunbutter Drops
1 cup sunflower butter
1 cup Demara sugar
1 egg's worth of egg replacer (or 1 egg if you can eat eggs)

Mix all together and drop by spoonfuls onto a cookie sheet.  Bake at 350 F for 6-10 minutes, until the edges just begin to brown.  Do not over cook.

Note: these can be made with other types of nut butters.  Some butters will require more egg replacer or another egg (peanut butter is one of those).

Also, watch the first batch of these closely when you make them.  They go from "almost there" to "oops" very rapidly!  The edges should just begin to brown.
