Strawberry Vanilla Jam

 My favorite fruit in the whole world, contrary to popular belief, is not mango.  It is strawberries.  I have fond memories of eating wild strawberries at my grandparents house.  Eating until I was absolutely stuffed!

Absolutely my favorite. Now that being said my favorite fruit combination would have to be strawberry, mango and pineapple.  Mmmm that may have to be jam for another day.  You'll come back, won't you, for that one?

But we're not playing with mangoes today.  Focus... or you'll miss this one.  And you don't want to miss this one.  Strawberry and vanilla blend to make a taste sensation that will make your taste buds sing.  And your friends rave. 



Strawberry Vanilla Jam
1 quart strawberries, washed, chopped
1 cup sugar
1 vanilla bean, split and scraped
1 tsp. pectin
This made 2 half pint jars with a bit left over.

Mix the strawberries, vanilla beans and sugar in a bowl and allow to sit for 2 hours.  This draws the liquid out of the berries.  Don't worry if you can't get back to the berries, you can leave them for up to 48 hours.  Place mixture into a small saucepan and bring to a boil.  Stir in the pectin and simmer until the jam thickens.

Pour the jam into warmed jars.  (The jars need to be warm so the hot jam doesn't shock the glass causing the jars to crack or break)  Set them aside with their lids until cool and refrigerate.
